Help me plan our road trip from Salt Lake City

I posted an earlier thread about whether or not to go on a road trip under the current conditions and based on replies, we are going for it.
I'm doing my own homework, but I'd appreciate any advice from the board on planning this trip. We are flying into SLC at the end of July and spending 11 days (arriving on a Monday and returning on a Saturday). We were originally planning on heading south, but now think we would rather go North and West (towards Idaho, maybe Sun Valley?), but all recommendations are welcome and appreciated.
A little info:
We are a family of 4 with twin 11 year old boys and enjoy the outdoors.
We enjoy hiking, but I had knee surgery earlier this year, so I'm probably limited to day drips in the 5-8 mile max range.
1,500 to 2,000 mile max range
Accommodations are not important and we'd like freedom to book hotels on the fly over setting a rigid agenda, but we'd like to get a cabin somewhere for 3-4 nights, maybe on a lake?
Would like to go on a rafting trip, canyon environment would be great.
Any advice is appreciated on hikes, parks, activities, restaurants, etc.

Have you considered renting an RV?

We did, but I've found it thought to be flexible because camping spots need to be booked in advance. Hotels/lodges/airbnb are easier and cheaper.

Not much help, but drove from SLC to Jackson Hole last week and it made me really want to go back and spend some time in Idaho. Beautiful area.

I can't help much with the road trip portion, but Salt Lake is great. See if you can do a Great Salt Lake cruise if they are being offered. A trip to Snowbird to ride the tram and take a short hike would be killer. Check a Jazz game if you can or perhaps a minor league baseball game if they are playing. The Mormon Tabernacle and Square is something to be seen.
Plenty of good places to eat there too.

Unlike Alabama and Louisiana, Utah never shutdown. I had hoped that their minor league team would still be playing, but it appears to have been a national decision on the minor leagues. Pretty sure I worked the word PERHAPS into my sentence.

Yeah Wick, that's why the plan is to head to Idaho and loop back around to Wyoming.

I wouldn't recommend winging lodging completely. You need to at least look ahead of time to make sure there is availability. Have you looked at prices for lodging? FYI something like a motel 8 around Yellowstone is usually $250/ night.
Occupancy is supposed to be way down in the state parks due to lack of people from California and Asian tourists so that should help you out with lodging.
Finally, what are your key points you want to hit? Are you trying to go to Yellowstone or Glacier or anything there?
Salt Lake City headed north is just a lot of area.

We're open to whatever, honestly. We've done Yellowstone and the Tetons, so no real need to see them again, although we may because we are in the area. We hadn't planned on going to glacier because of all I've read on the board about the better sections being closed.

If you do make it to Yellowstone area, if you are headed back and went through Idaho and that route going, coming back down through Pinedale and Lander Wyoming is kinda of neat. South Pass City is about a 90 minute stop to check out. IF you continue south towards Rock Springs down 191, it's high desert country. One of the largest concentrations of wild horses in the country. I'm not sure the Salt Lake to Yellowstone route takes you through the Star Valley/Afton/Alpine Wyoming area or not. That is a real pretty area. The Wind River Range is pretty. Pinedale on one side (west) and Lander on the other. Gannett Peak is actually about 15 feet higher than the Grand Teton and highest point in Wyoming. I like to see the postcard places, but I try to venture out and find some hidden gems out there that aren't high traffic tourist areas.

Well, you're out west so the great news is that there is plenty of BLM land available that is free to use for 14 days at a time. Campsites, reservations, etc are not needed and there is more than enough to go around, so need to worry about crowds
