Bill Barr has "over 500 investigations" into the current rioting.

Barr explains in this interview that they are not doing nothing. He has 35 joint domestic terrorism tasks force in key locations around the nation with currently over 500 investigations and as President Trump said on Hannity last night, 100's of arrest.
However Barr further explains that to stop this violence it takes the efforts of local, state and federal LEOs. The federal government is positioned to take action after the violence occurs whereas local and state LEOs are positioned to take action before or while it occurs. The reason is simple. Federal LEOs are not walking the beat except for federally owned lands.
It's obvious but I'll say it anyway, the leaders in Democrat run cities and states are purposely dropping the ball and hamstringing local and state LEOs in Democrat run areas to sow chaos in hopes that the chaos in these Democrat strong holds will help President Trump lose in November.
The good news is these federal domestic terrorism task forces are moving in with their investigations and removing the leaders of these domestic terrorists groups. It's good news because the same leaders that organize violence are the same leaders that will commit voter fraud in November but this time they will be in jail unable to commit voter fraud.

I understand wanting some high-profile arrests or announcement. At the same time, if Barr has a press conference that they took down 200 antifa types, I can see some backlash that it is political prosecution. It might be better to just pick these people off individually.

Apparently so. They have made hundreds of arrest already. I'm sure some of these arrests are associated with dropping off bricks or throwing bricks.

Agreed, but I have a different theory as to why. They want Trump to call in troops to start mowing down civilians so they can pin a Kent State situation on him. They want to be able to tell people that Trump sent federal troops in to kill American citizens and have the proof to back it up.

Drain the swamp
And even after PROVING that everything that went down was in fact illegal
Not a single high profile arrest
Even after PROVING these riots are nationally orchestrated and stated it is a federal issue - no high profile arrest

Barr was also the AG when the FBI HRT shot and killed Randy Weaver's wife and son at Ruby Ridge. Barr defended and sought immunity for the snipers.
