Cost to make Jambalaya?

What would the cost be to make jambalaya for 100 people?

Depends on what is going in it. If a basic chicken/sausage based jambalaya, probably no more than $40 tops if getting the chicken on sale like I do. I buy 20 lbs. of leg quarters when they go on sale for $.39-.59 a lb. and split breasts for $.99 a lb.

Your biggest expense will be the sausage that is around $4 a lb. for decent smoke sausage, or upwards of $6+ a lb. for real andouille.

The rest is seasonings, rice and stocks----all pretty cheap.

Now if throwing in some sort of seafood like shrimp, naturally the cost goes up.

I think itll more or less depend on how big your portions are. I always have to think about if the jambalaya will be accompanied with white beans, a salad, and roll etc like a fundraiser plate or is this decent sized entree bowls. Id assume it’s the former if you are talking 100 people.


Regarding what gumbo said above, I agree with how cheap you can get your ingredients, but youd probably want 10-12 lbs of sausage minimum and 10-15 pounds of chicken/pork. The chicken and pork is cheap for the most part, but that sausage alone will cost $50ish, which still isnt bad. The sausage is the money maker to any good jambalaya too so you dont wanna disregard the amount or quality you put in. Obviously your rice and trinity arent too pricey either. Jambalaya is a budget friendly thing for 100 people.

Probably $80-100.

Stadium Rat put together a jambalaya calculator many years ago. Search for it. It may help you get a more precise idea of the cost.

Answer these two questions...

1. Chicken/sausage or chicken/sausage/pork?
2. Do you want a piece of meat in every bite?

THEN your cost can be calculated much easier.

Download the Jambalaya Calculator version 7.3. Put in 100 servings of whatever serving size you'll be using. It will calculate the amount of each ingredient you need. You'll have to figure the food cost from there.

I must be doing it wrong, lol.
10 lbs sausage, 10 lbs chicken - I usually spend close to $100 total ingredients.
That will feed 30-40 people if I make white beans for a side.

20 gallon pot, 20 pounds rice, 20 pounds chicken, 20 pounds sausage, 12 pounds onions and seasoning...I'd say roughly 120 just for jambalaya itself

I’m not sure where some of these numbers are coming from, but typically when served plate lunch style, the rule of thumb we always use is ten people/gallon/lb of rice. So, 100 servings will require 10 gallon pot, 10 pounds of rice. Personally, I’m putting ~ 30 pounds of meat in. 10 pounds of seasoning blend.

$1 a serving will get you really close.
