Instead of a crawfish pie and cream sauce, I'd get crawfish boudin balls from Billy's and drop them in a bowl of crawfish etouffee or crawfish bisque.

I made crawfish gumbo for the Natty. I got the crawfish rice balls from Kartchner's. I guess their crawfish boudin balls, though they don't call them that. They don't have a crust on them. I defrosted, dropped them in a bag of bread crumbs to coat and fried them. We used them in the gumbo rather than rice. Really nice texture. Reminded me of boulettes in crawfish bisque.

Oh, don't for one second think my mind didn't IMMEDIATELY go straight to Billy's boudin balls and all the things that would be delicious on top of it. Boudin and pepperjack cheese inside? That ring cake is the baked version of Billy's balls.
Unfortunately, I don't get enough time for lunch to cross the Basin and wait in line at Billy's. I will be picking up a couple of bags of the frozen balls the next time I visit my parents, though, and will be playing a bunch of rounds of "what will be delicious on this?"
Also, crawfish bisque. It's almost the time of year where I spend all day making a giant batch of bisque to stock up the freezer.

For the love of God, can someone market these under a name other than king cake? They are awesome, but they are not king cakes.

Thanks. I'll have to try those sometime. The bread crumbs worked great on the ones from Kartchner's. Kartchner's are not cheesy, so they were great in the gumbo.

The Billy's crust is more like a drench and dredge style crust than bread crumbs, just FYI.

I've tried the plain boudin balls in gumbo and the crawfish boudin balls in etouffee. Both very good.

Looks good. There is a place in Lutcher selling pretty awesome Muffulettas too
