Dear Friend,

There is but one place I buy my fresh oysters: P & J Oysters on Toulouse. They are only open in the mornings and I think they only sell half sacks now. They tried selling them shucked, but I'm not sure they sell them shucked or not anymore.

I try to get there before 7 to beat the traffic and to get the best choice. I hope you find them to be as wonderful as I do.

Sincerely,
TulaneLSU

What frustrates me about buying shucked oysters is there seems to be no standards as what constitutes a gallon/quart/etc of oysters. Several years ago I tried to find out what the standard weight was...I was told all kinds of BS. I contacted "officials' in Louisiana, Mississippi and Alabama. I didn't necessarily expect the three states to agree, but officials in each state couldn't agree with themselves. Right now it's seems to me it's whatever the retailer can get away with. Buyer beware!! That being said, P&J is where I would go in N.O....if for no other reason...freshness.

Schaefer's in Bucktown for shucked or sacks/half-sacks.
