Baking in a convection oven on a wire rack >>>>>>> frying. By a good margin.

I would normally laugh, but you have F&D cred. How long and at what temp?

I'll try it this weekend.

I baked at 365 for likely around 40 minutes. Convection mode. Turned/flipped at 20 minutes. Used a wire rack to elevate.

They were better than fried, which were very good. No contest. And I love fried.

Double Fried wings are superior to anything in the oven.

Fry once and let cool. Fry again and season / eat.

Same way the Best Stop does Cracklins.

I do:

Toss in sauce
Wire rack in oven on 250 for 20 mins
Take out, Ross in sauce again
Back in oven for another 20
Then broil for about 1-2 mins to crispy
Toss in sauce and devour!

It’s not the wedding...engagement party. I’m there...hell, I’m cooking for it. Roasting beef tenderloins. Ha.

There are some recipes out there that have you roll the wings in some baking soda to add to the crispiness. I used a little flour then dipped in sauce and back in the oven for a few..Came out pretty good.

I did batches seasoned exactly the same, side by side, eaten hot...side by side. You completed that test?

If you use the convection mode and cook the wings on a wire rack, you’ll get a more crisp, less greasy texture and taste than you can produce with the fryer. A better wing.

I will try that method. Always willing to try something. I’ve baked a few wings. Smoked a lot and fried hundreds of pounds.

How many restaurants are serving baked wings vs fried wings? Why do you think that is?

Or we can take a poll here. Upvote for fried wings. Down vote for baked wings.

Don’t want to argue for the sake of arguing but I just don’t see it. And I’ve eaten and cooked a lot of wings.

I love starting wings out on a grill and finishing them in the air fryer. This is a great method especially when using a gas grill.

This is Alton Brown's preferred way but he steams them first to render excess fat for a crispier skin. Finishes them in the oven. They looked good.
