Saturday, for two sacks, I used
1 and 1/2 bags of Chackbay
1 bag of LA powder
I bottle of LA liquid
All the usual lemon, onion, celery, etc
I didn’t notice the lack of flavor like y’all, but I’ve got other spices in there with Chackbay. I did notice being pretty dehydrated Sunday and today. They were salty. Just didn’t notice when we ate them right out of the pot.
Sucks to see all this. That LA/Chackbay combo was perfection.

I didn’t remember that combo being as awesome as it was. But yeah, whatever they did to change their recipe works unbelievably well with Chackbay now.

Been using the 1 bag Louisiana and one bag check bag for 2-3 years now. Second sack half of each. Can’t beat it. I’ve boiled 5 times this year and me and my guests haven’t noticed a difference. But maybe that’s because I mix in the chackbay.
Only boiled Ive eaten that are better than mine are tramontes. Anyone know what they use? Also, Carlton’s in Central, La has a pretty good mix; need to try theirs again.

I use LA and usually mix in some swamp fire.
My first boil this year they didn’t have the SW when we got the other stuff so I decided to try one pot just LA and one pot just cajunland.
I also measured how many gallons of water I put in the pot. LA always just said good for a sack. Cajunland has specifically 7 gallons of water. Makes sense why I like that extra LB but I was still short on LB/gallons and probably why I liked topping off with some more seasoning in the water.
The cajunland boiled over (was borrowing a friends smaller pot) so not sure if that changed results but LA>cajunland to me. What I’m not sure of is if I used leftover LA from last year or a new one I bought.
Sucks if it changed flavors....

I want to do a test batch Friday, before i cook a bunch for easter. What would you recommend the amounts for 1 sack?

When you’re ready to soak, use what’s left of the LA powder to adjust. You probably won’t need to add anything. They’ll be pretty close to perfect with all of that. Just depends on how much of the potatoes/sausage/corn type of stuff you add to the soak.
Enjoy it. Gonna be delicious.

How big of a bottle? I'm going to costco/sams this week to get some stuff for it. Don't want to get costco size if i don't need it. Same with the chackbay/louisiana bags. How big are the bags? And where can i get chackbay.

I just ordered Chackbay off Amazon. I will add that to the Louisiana powder when I boil on Good Friday.

as far as the liquid, i would do what you normally do.
I personally like 10oz or so I buy the 16 oz bottle

I've stuck with zatarains seasoning. Its harder to find, but the taste is better and not as bland/salty as Louisiana
I also use the zatarains crab boil bagged seasoning in all my boils. Gives a great flavor.

Zats - 480mg of sodium (20% of the 4.5 lb bag)
La - 300mg (12% of the 4.5 lb bag)

Definitely more salt in the La bag compared to last year. I just thought about it a few days ago how I hadnt added salt this year.

Did a sack yesterday. Still had half a bag of LA so I did that and half Zats powder. A little la liquid. It came out pretty good
