It's rare for TEs to blossom this late, but it's not uncommon for TEs to perform well between 32-35.

At 32y/o & 35y/o:
Gonzo: 1050/10 & 870/7
Gates: 540/7 (15 games) & 630/5 (11 games)
Watson: 500/3 (14 games) & 830/6

I know that those are all-time great TEs, but there aren't many players at the position that kill it at 32 years old. If they play well at that age, they don't really fall off. Cook doesn't really have a comparable player that I can think of, but odds are that aging won't affect him too much over the next 3 seasons. I can see him putting up 700/5 over that 3 or 4 season stretch.
