Paris Day Trip - Small Town Recommendation

My wife and I are travelling to Paris in mid-March and will stay for 10 days. We have slotted a day trip for one of those days but are unsure where to go. Ideally we are looking for a small town with vineyards for a wine tour/ bike tour of the area.
We had a day trip to Beaune planned but the wine bike tour was on winter break until April.
If you were to take Versaille out of the equation, where would you recommend?

We are not particular regarding wine. Anything on the red spectrum works, from the lightest of Pinot’s to the heavier Syrah’s.

Second Champagne region. Hard to beat for proximity to Paris and the Cathedral at Reims is a sight to see.
Could also head to Dijon for more of a gateway to red burgundy. But really French vineyards tend to, although this is changing, be less open to casual visitors than you may be accustomed to.

St Malo is 4-4.5 hrs by car. A bit too far for a true day trip.

We took the short high speed train ride to Reims and toured Veuve Cliquot. There is also a beautiful and historic cathedral there where all of the French kings and queens were crowned. The stained glass is beautiful.......... Speaking of stained glass, another day trip is to Chareres to see that incredible cathedral. Another is to Giverny to see Monet's house and gardens. All three of these trips are a quick and easy train ride from Paris.

Try Amboise. In the Loire Valley. About 2 1/2 hours by car. Not sure about trains to that area. Good wine very close by, a castle in the center of town, and the town where Da Vinci last lived & worked. Bike tours from here are popular.

Reims was fun. You can book a tour guide to show you the city, some great history. Then tour champagne houses, Tattinger was cool.

Luxembourg City by train. About 2 hours. It's another country and very cool. Tour the casemates, most beautiful balcony in Europe, chocolate tastings, great old town, etc. It's just a tiny cool place that is perfect for a day trip. Great to walk around.

Ditto on Amboise. We stayed at Hotel Le Choiseul and it has a Michelin Star restaurant (Le 36) at the property. You can see Chateau Chenonceau and Château de Chambord. Look at Day 1 - 3 on our blog below.

Headed to Alsace-Lorraine region in May. Staying in Strasbourg and Colmar. Any suggestions. Places to see, eat,drink? Thanks.
