Seafood gumbo - andouille or not?

I was going to try Cajun ninja’s recipe but it calls for andouille/sausage. It seems wrong to me.

Is it necessary for seafood gumbo?

Generally a bad idea in seafood gumbo. Why spend the money on the seafood if you are going to cover it up with sausage.

IMO there’s seafood gumbo, then there’s *insert poultry/fowl* and andouille gumbo.

My thoughts exactly. Prudhomme’s recipe had andouille too, so I thought it must be more common than I remember.

Cajun gumbo, no sausage with seafood. Creole gumbo, add tomatoes, sausage, and whatever else you want to throw in with the seafood.

absolutely not. Do not mix land and sea proteins in gumbo.

I add it all together....sausage, seafood, fowl, okra...... Not one person in 20 years has complained about it....it is requested all the time. Rules?.....pish....it's about taste, and mine tastes damn good.

I am not saying it is not good. I just do not do it personally. Delicate seafood flavors get over powered by andoullie.

I guess I should clarify that I use a green onion sausage that isn't as smoky as andouille....but I understand what you are saying.

It's not necessary for seafood gumbo. You put it in there, by default it becomes something different.

However, pure seafood gumbo isn't everyone's cup of meat. I like my gumbo with crayfish, tomatos, okra and...ANDOOEY!
