Bring him to walkons on campus, it will be a memorable experience for him to see the atmosphere. Tell him to remember how much stuff is going on 24 hours before the game starts. The next game you guys go to, point it out again. Make sure he knows how big of a game this is. He will be hooked on college football from this point on.

Albasha, if you want Lebanese, because it's delicious.

Walkons, Chimes or Pluckers with an 8 year old. He'll enjoy any of them

Are you or the boy in the mood for anything in particular? Also, you how many dollar signs are we talking? What part of town will you be in?
With the above information, we can make some pretty good suggestions for you.

The Chimes would be great.
If you want something a little random, the tacos at La Morenita (a grocery store off Florida Blvd) are incredible and just $2 a piece.
Curbside is a great option for hamburgers
The Overpass Merchant would also be a solid choice
Louie's for classic diner food
Albasha's or Serop's are both good choices for Lebanese
Walk-On's is solid for the atmosphere, and the food's not bad either.
For picky pizza eaters, it doesn't get much better than LIT pizza
The White Star Market is great if you're not sure what you want and want a lot of different kinds of options (they have a BBQ joint, Asian place, oyster bar, pizza place, etc all in there).
Sammy's is also solid.
Pinetta's would be memorable for certain if you want Italian food other than pizza.
For downtown, I would recommend taking the little guy to The Pastime or Po'boy Loyd's. Neither of them are fantastic by any stretch of the imagination, but the atmosphere is really cool. Or, swing by the jambalaya shoppe and get a bowl of chicken and sausage gumbo over jambalaya rice (gumbolaya).

Is the Plantation Room (?) still open on the 3rd floor? Is the Faculty Club open to the public?

I'd suggest Chimes or Walk On's, soak in some of that energy. Hope you and your boy have a great time, can't wait until my son's are old enough to go to games.

Honestly, if they're wanting burgers, I would steer them more to Fat Cow. Right off campus. Great burgers. Good shakes. That said, your list is solid.
