Lets Not Talk Taco Tuesday : Ground Beef Recipies

My wife has a really good recipe for her ground meat when she does nachos, but uses a packaged taco seasoning for tacos. I have some time to do something different if something interesting comes to mind..... while we are not talking Taco Tuesday.
Anyone have a banging ground beef recipe?
What about toppings?
I am making a pico tonite, shredding colby jack cheese from a block, and will use plain Greek yogurt instead of sour cream.
If I can get to a store I will sub a queso or quesa Fresca for the colby Jack... but that’s all my Bride has n the fridge.

Brown ground beef with a finely diced yellow onion. Drain, and return to pan. Add a little water, tomato paste, chili powder, cumin, ground oregano, and salt to taste. Let the water and tomato paste reduce down.
That's about all I do. Sometimes I'll throw some ground chipotle pepper in there.

Just braise some chicken or chuck roast in your favorite salsa. Much better than ground beef tacos.

In some Mexican joints, they put very tiny diced potatoes into the ground beef. Some even put a handful of green peas. It is done to stretch the meat, but I actually think it is very good.
Like this, but I cut the potatoes about 1/3 of this size. Super small.

i add finely diced white potatoes to my taco meat and brown them with the beef/spices/etc

I am a smug taco guy but I still love grand beef tacos. It’s a simple pleasure
But people seriously use these tortillas. It’s much better than the floury mess most prepackaged tortillas are

I buy my taco seasoning in a container from RD and add a little water and the seasoning after I brown the meat. Sometimes I do add taco sauce to the meat as well.

I do this minus the tomato paste, and I add some finely chopped garlic, too. If I have a jalapeno on hand, I'll chop that up and throw it in there, too.

I put the meat (beef or turkey) in a pan, add my seasoning (McCormick hot packet plus pinch extra salt), then cover with water. Bring to a boil then simmer until liquid is reduced. I skim the fat towards the end.
This will produce a well seasoned and fine ground meat for tacos/enchiladas/etc.. You can add onion/pepper etc as well.

That's more of a Picadillo, next time use mirliton instead of potatoes, that's what they use in the Philippines. I like it better than potatoes.

During my Automotive industry career detour, I was chief Quality Engineer for Packard Electric Division of GM. One of our plants was in Nuevo Laredo and I spent a good bit of time there.
The plant was 100% Mexican national union. As a part of our contract, the in plant cafeteria provided two free meals each day to the all of the (Alambrado Automotrices) employees.
The first break meal was almost always flour tacos with potato filling seasoned like tacos - no meat. Probably had some onion and cilantro too. They were tasty. They also had Tab soft drinks that were still sweetened with cyclamates. Also tasty. I never objected to going down and was always happy each day when I came back across the border into the Anus of a town most folks know as Laredo, TX.
I have said a hundred times I wanted to recreate those potato tacos in my kitchen. Maybe I will do that now.
Sorry to get off topic, but this always comes to mind, so I will share it: The one phrase I always kept in mind (in case I got turned down the wrong street and lost) was "¿Dónde está el Puto Puente?"

Need ripe avocadoes. They need to feel a little soft - not hard. If they are, scratch off the little piece of stem left on the fruit. If it is green the avocado is ripe. If brown,it is overripe - don't buy it.
For Two ripe avocadoes, Cut fruit in half and scoop out into bowl with a spoon and then squeeze maybe 1 Tablespoon lime juice over the pulp. Add Pre-paired 2 Tablespoons finely minced onion 2-3 tablespoons 1/4 inch peeled and cubed tomato (tennis ball tomatoes work really well) and 2 Teaspoons of (very important to use this brand) Lawry's Garlic salt. Mix well and eat.
