Myy hands are tingly burning from cleaning and chopping them.
Ghost peppers taught me a thing or two about the importance of wearing latex gloves when chopping super hot peppers.
Now, when I cut up some of the super hot peppers I grow, I make sure to double up the glove on the hand I hold the peppers with. It doesn't take much for latex gloves to catch a small hole in them.

Yeah, I had gloves on all while chopping the other seasonings and took them off to do something. When I started with the peppers I realized I forgot to glove up and said to myself "I don't need them for the bell peppers!" Lol...... Live and learn.

I just made an experimental sauce similar to gumbo2176 recipe. Tried roasted peppers, and little passion fruit pulp and malt vinegar.
I really like the flavor just before the heat kicks in.

I've got jalapenos, habaneros, poblanos, and annaheims growing this year.
Bumper crop of jalapenos that I'm waiting to turn red, then I'm dicing them up and fermenting them for hot sauce. Probably will do the same with the habaneros since it looks like I'll have a ton of them as well.
Annaheims and poblanos will be roasted, peeled, and then frozen for salsa verde down the road.
ETA: Also growing red and orange bells for the wife since she's not a fan of hot peppers.

Got quite a few ghosts coming in. Probably 25-30:
Posted a thread where the leaves were yellowing earlier this year. Fixed the issue, obviously .

We just pickled a dozen jars of hot cherry peppers. I have dragon cayenne and regular coming out the ears. We have made several batches of infused olive oil and pepper sauce. I think we are going to ferment a couple batches for hot sauce. I have dozens of anaheim, jalapenos, and poblanos that are almost ready. I did one plant of Santa Fe for the color and they are about to be ready to go as well. We also have a bunch of different sweet peppers that are almost done. I don't do super hot peppers.

I've grown jalapeno, poblano and serrano but last winter's South LA freeze killed them. My jalapeno was so prolific too. I miss it.
I planted jalapeno and a Tabasco branded blend that looked colorful and interesting. The plants are growing well but no peppers yet.

Do you ferment your hot sauce?
Brad Leone from Bon Appetit does this video series on their Facebook page called It's Alive, and he has a fermented hot sauce recipe that I'm dying to try to make. I love that fermented flavor.

Any more recipes that are not fermentation ones?
I make one with vinegar, garlic and 40 peppers I learned on here, but I do it different every damn time so it always is a bit different.
Would love to try to expand this craft.
