But I’ve seen professionals go down to “amateurs” too.

I guess it’s the arrogance that comes off in some of these threads with some people.

Great food is great food whether it’s cooked by someone’s 90 year old Italian Meemaw or Some 5 Star chef.

And discounting the food of an entire region based on the fricking jambalaya shoppe is a disservice

Who the hell in south Louisiana goes out to a restaurant for "cajun" food anyway? I can't remember if I've ever ordered jambalaya in a restaurant. The best cajun food is made at home....in your home town.

Your trip to Jambalaya Shoppe gives you zero credibility as a food critic. Your post overall gives you no credibility in general.

This is true. While we might not have the best BBQ restaurants around. I wish everyone could eat BBQ from a guy I know, who use to open up only on Saturdays. He built a set up, it's sort of like a food truck, but it's built on a trailer, which he pulls with his truck. Anyway, he has two or three other jobs and only BBQs for the HS home football games, etc.. But he has the best BBQ I have ever eaten.

It's almost an insult going to a "bbq" restaurant (just because you put BBQ sauce on it doesn't make it BBQ) and get served the food that they serve after eating his food.

But one of my favorite places to go eat is an old place that use to be a gas station. Some of the people on here probably know where I am talking about, I forget the name of it, but it's on the river road near Lutcher.

There is a "hole in the wall" place in Opelousas, I forgot the name of the place. It's nothing special. It doesn't look like a place someone would look at and say "let's go there. I bet the food is great", but in reality, the food is great..

Almost as bad as thinking baton rouge was Cajun. It's about as cajun as Shreveport.

Right.

Before we do competitions, pretty much the whole day before is just prep for the cook. Everything is from scratch. From the stock to the grease to the meat. There’s passion in it.

You can’t do that on a consistent basis with a business, unless you have serious scratch and a team where cooking is their gig.

Whoa now...there’s a whole lot more Cajun aspect to Baton Rouge than Shreveport

I was going to argue with you. Then I thought about it. I wouldn't even have a suggestion if someone asked me where to get good jambalaya. Or Gumbo for that matter. I always make them. Or eat them homemade at a family members house.

When I think of Baton Rouge I think of the greater region.


I think of LSU tailgating to be honest.

Baton Rouge proper not so much but there’s a lot of coonass, especially to the south
