I last went years ago as a poor college student. It was fun but finances were limited and we prioritizes getting trashed over sampling all the wares.
I’m excited to go this weekend as a (mostly) responsible adult not hampered by those financial limitations. Just reading the list of food has my mouth watering. I may eat myself into a coma.
Also, what’s my best bet for good beer? I’m assuming the selection on the streets won’t be much to write home about. Will Parish and other locals from around the state be set up?

It is of my opinion that you MUST get the crawfish Mac and cheese bread bowl from Pops. They also do nice refreshing cocktails, which you may as well get since you stand in line so long for the Mac.
They have a craft beer garden every year, so finding decent beer shouldn’t be an issue.

Best bet for good beer (tied to fest) is the Festival Craft Biergarten, conveniently almost nearly across the street from the Wurst Biergarten (which will likely be packed and require a cover).
If you're going to be hitting up the festival drink tents, and the official festival merch tents (t-shirts/posters/etc.), I'd recommend pre-registering for the RFID wristband account before festival starts.
Link to register/set up digital wallet.
When you show up to pick up the free wristband, all you need to do after pre-registering is go link your wristband to your account in their website.
This is replacing their old physical tickets system where you purchase tickets and exchange tickets for drinks. Gonna make lines really fast for drinks.

They have a beer garden as part of the festival and The Wurst Biergarten always has a great selection.
Just a heads up, this year they're going cashless for drinks, so any transaction for alcohol at the festival will require a wristband that you can preload with money. Hoping this goes smoothly because I always hated having to keep track of how many drink tickets I have/need.

Now second question. If I was so inclined to step into a bar for a drink or two, what is my best bet as far as selection goes? Last time I’ve been to a bar in downtown Lafayette was the Green Room 8 years ago.

One of the vendors use to offer a fried eggplant pirogue (fried eggplant little boat with crawfish etouffee lathered on top.

Jefferon St. Pub has a pretty good craft beer selection
Dat Dog has a bunch of good craft taps
Green Room is decent
Wurst Biergarten will have the biggest selection but as someone already said, it's going to be packed as hell

Central Pizza, Greenroom, Dat Dog, JSP have decent selections. Marley's and Legends have the typical bar selection. Wurst Biergarten would have best selection, but might have a cover (maybe not during the day).

the best cocktails are at Pamplona IMO, for beer you can go to the wurst biergarten (possible cover) or Jefferson St. Pub. Legends Marg is really good if its hot out.

Is there really no choice for drinks but the rfid wristband? I don't want to use that crap and be tracked. Guess I'll pay cash for drinks at the bars. Less money to the festival. A shame.

Goes without saying they aren't tracking you, but you paranoid frickers can get a wristband and put only cash on it, and not even register an account to the wristband. Only thing you'd need to do is take a picture of the account numbers on the RFID wristband in case you lose your band, you can go to the customer service tent and freeze the funds on the lost band and/or transfer funds to a new band. (registering an account allows you to freeze a lost band yourself)

I think this will get the lines moving, and will harder to lose than tickets.
ETA: I see that is says beverage and merchandise booths will take the wristbands, does this mean that food booths won't? That would be pretty stupid if so.

Currently food booths and the independent artists will not accept wristbands/RFID. I believe that is the plan for future years, but I guess they want to make sure everything runs smoothly at the beverage and merchandise booths before they roll out systems to every food vendor and/or artist.
