Are you driving across the US or flying? Would suggest grand canyon and rockies for sure
ETA: OK I see no car. Flight wise new orleans to dallas or houston is super easy and cheap. Then fly to denver and make your way into the rocky mountains. Denver fly to vegas and see the grand canyon on a tour

Between New Orleans and Los Angeles I have 10 or 11 days to play with.
Would Dallas be the choice for Texas then?
I have never even thought of Denver. How do the Rocky Mountains compare in Denver to Canada because I might be going to Canada in 2019.
Is the Grand Canyon still worth doing for a day trip from Vegas? It would be a long day but it goes to the South Rim which is the best bit. Only $89 for a round trip.
