Eat all the fricking pancakes you can stand.
I would add hiking in the National Park. They have everything from easy to expert. It’s a really nice way to explore what’s around you.
If you have kids, hit any of the go-kart/arcades along the strip in Pigeon Forge. Easy way to kill a few hours. There are also some indoor water parks as well.
Dollywood is a great park for rides and entertainment. You can also stroll along the strip in Gburg hitting the shops as you go.

This. We went a couple times before we had kids and, for whatever reason, never made it into the National Park. Last time we were there we took our oldest with us into the park and did the short trip up to Clingman's Dome. After that, I wanted to go and do so much more in the park. Definitely don't miss out even if it's just taking a drive through and checking out some of the great vistas.
