I'm in need of a roofer in Ascension anyone deal with one lately that you were pleased with. Preferably one with liability and workmans comp

I don't know, but make sure they are bonded, insured, and do not pay a dime up front

Not Garcia. I used them a couple years ago. They lost probably 200 nails in my yard and didn't clean up worth a shite. I have seen Premier South work in my neighborhood and they seem to be a lot more professional.

make sure they are bonded,
Whenever the OT has a thread about residential roofers, someone always says make sure they are bonded. Very, very few residential jobs are bonded. I worked in the roofing industry for 20 years and I don't know of any residential jobs being bonded.

a professional services company is not "bonded".
all that means is that they qualify financially to purchase a bond on a per job basis, for which the owner of the project pays the premium
if you as the owner do not purchase the bond, then your project is not "bonded" and neither is your contractor for that project

Serious question: How do you protect yourself in this situation?
Ask for Accord certificates for what, liability and worker's comp?
Ask to be made a named insured?
What do I need in hand before the guy gets on the roof?

you should ask for a copy of a certificate or insurance naming you as additional insured, it should show his workers comp and GL at a minimum. I would also confirm his license is current and that he will not subcontract to any unlicensed entity. finally I would want to see a copy of the manufacturers warranty for the properly installed roof, and a copy of the installers standard workmanship warranty
that's about all you can do and it should be enough
