I really want to try this recipe Pork belly ramen
Small problem. I dont have access to chicken oil (schmaltz). My question is, do you think I could substitute this fat for butter? Or ghee? Or maybe even lard?

Ive not cooked with lard but i would definitely go with a saturated fat like lard or butter since it matches the solidness of chicken oil at room temp

You have access to chicken schmaltz. Go buy a bunch of necks and backs, trim the fat, and simmer it a little bit of water for a few hours. You'll get the schmaltz

You can make chicken oil. Just put a bunch of chicken skin in a pot and let it render low until the skin gets crispy then remove it. Walla, chicken oil.
Can add garlic for flavor. It will last a couple of weeks in fridge.

You can find it at nice butcher shops like Iverstine's occasionally. I'd make a few phone calls.

The problem is that i am in cenla. I think i will try it first with lard and if that doesnt turn out ok, then i will proceed to making it myself.
On a side note, i realized today that it must be difficult to be a Jew in Alexandria. Kosher food is not very plentiful in variety around here.

You don't need shmatlz. Add a deboned rotisserie chicken or some roasted pork neck bones to your broth, reduce by 1/3 then strain of all solids.
And for the love of all that is holy, get yourself some good ramen noodles. Don't use that instant crap.

Saltine in Jackson, MS makes some of the prettiest/best tasting ramen you'll come across.
