Chackbay Seasoning

I normally use Zatarain liquid boil, cayenne and salt. Been using that for 30 years and it's always been very good. All these years I've been leery about trying something different. I keep hearing good things about Chackbay. Do any of you that use this kind of seasoning have a surefire ratio of how much I need to add to the pot along with the proper amount of salt so I don't screw up the entire sack of crawfish? I was thinking about adding the Chackbay and 1-2 cups of Zatarain liquid boil. That's what I thought I read in the TD recipe collection above. The bag of Chackbay says it will season 60 pounds of crawfish but I just can't see how that's possible. It's a small package. I think it's 12 ounces. I'm using an 80 quart pot.

It'll do a sack...30-38 lbs. add 1 or 2 boxes of salt. Plus the liquid. You'll quit buying the other mixes.

Otis, do you personally add 2 cups of the Zatarain liquid or is that going to be too spicy? You are one of the main reasons I want to try this Chackbay out. I've seen where you posted Chackbay numerous times is the way to go. I did a search on here though and there was a debate on how much liquid Zatarains to add. A couple of guys said add one small bottle and cayenne. I just don't want to screw up a $75 sack of crawfish.

2 cup in 35 quarts of water will not be too much. Add 1 box of salt, seasonings, and heat the water. Taste. Add the other box if you like...I always use 2 boxes for the first sack.
Chackbay has very little salt compared to most products. It has the Chinese red pepper, which is a flavor I really like.

That's for a sack of crawfish, bushel of crabs or 30lbs shrimp. Never had a complaint.

Ched is that spicy enough? 4 oz is like 1/2 cup. Otis is saying put 2 cups of the liquid Zatarains in. That's why I started this thread again to clarify what I thought I read last week.

taste the water. Start with less, add as you like. Don't forget lemons onions, and garlic.

I agree Otis that Chinese red pepper is better than cayenne. I can't find that stuff in the store anymore. Probably didn't sell good outside of LA cause it's so hot.

Alright Otis. Fair enough I'll taste the water. Probably the best advice I've gotten in awhile. Thanks in advance I'm about to give this Chackbay a try.

underseasoned rarely means not spicy enough
it's easy to control spice level via soaking time but not really with salt

Top thread ive read in a while. Im goin w Chakbay at next boil. Bought some a while back and will need to use it soon.
If its really that good, Im gonna have to re-do my 3 & 4 sack ratios. Have zatarains dry/liquid/lemon juice/salt perfected. Dammit FDB.

For my 100qt pot I use a bag and a half of chackbay, 2 small Sparh's bloody mary cups of liquid and a box and a half of salt.

That Chackbay and liquid Zatarains is better than Zatarains and cayenne. It reminds me of when I could find that Chinese red pepper. I used two cups of Zatarains crab boil and a 12 oz bag of Chackbay and 1-1/2 boxes salt. It was delicious! I had those big red hard looking crawfish so I thought I needed some extra spice in that pot. Just the right amount of heat for my taste buds.

I'm intrigued by this but it's very different from my usual.
I usually use a jar of the Zat or Cajunland and a half jar on the next round. I don't add salt because it's already in there.
Adding that small bag of chackbay and a huge box of salt scares the shite out of me.

You pay a premium for salt in the others, for less flavor. Try it.
