I prefer rare.

Eggs Benedict is my go to all over the world. Never gotten sick from eating it.

The main concerns should be vegetables that aren't cooked.

Most all tuna is flash frozen on the ships the exceptions being recreational guys and maybe a few local here and there.

Shrimp as well and it is fine.

But the book needs to be read in it's entirety to understand the context of what he is saying.

Absolutely. Most shrimp bought is previously frozen even at BR and NO markets. Doesn't bother me a bit.

I actually very much agree.

There's a major difference in ground meat and a roast/steak. Many people don't understand this.

You can still have some pink and still have it be cooked enough to kill bacteria. Sous vide for example.

I've lost so much respect for Anthony Bourdain. As a young chef I really admired and looked up to him but the more I read and hear his opinions on life/food/politics , I've come to realize he is nothing but another condescending northeast coast wannabe elitist faux-intellectual blowhard.

When I worked as a sushi chef, we would get fresh fish orders in on Tuesday through Friday and sometimes Saturday. Closed on Sunday's, so Mondays fish would be what was leftover from Saturday or thawed out. This schedule was the same for all 4 restaurants I worked in baton rouge from 2003 to 2011.
