Hummus would be terribly easy and kids should like it.

Give em some Hummus and call it chips and dip. What the hell do 3-5 year olds know about eating ethnic food?

Chicken satay would probably be good for kids. Who doesn't like sweet sauces

I was thinking something similar, just teriyaki.

Hummus and pita chips was my fall back option if I (read: you guys) couldn't think of anything else

I think this is one where the easiest route is also the most appropriate.

Chitterlings. Kids love them.

This assignment screams of white privilege and I'm triggered.

Finger food, bite sized, something they can touch/pick up/hold. No sticks, toothpicks, or layered stacks. How about little fritattas in a mini muffin tin, so each kind could have a two bite, easy to grab eggy tidbit. Put shredded zucchini and Parmesan in the frittata.
Or maybe some marinated ovoline or small fresh mozzarella balls; chopped fresh basil, a little balsamic or red wine vinegar, a little olive oil. Put 2-3 in a little cup for each kid, easily eaten w fingers, and not completely unfamiliar, as most kids his age have eaten string cheese, at least.
Tiny pizza bites (cut from a larger pizza) or focaccia squares......topped w tomato and cheese. Again, familiar in form to the kiddos but clearly Italian. If you wanted to challenge their senses, put a few chopped olives on top.

If you want to make a dip other than hummus, you could make baba ganoush with pita chips.
bruschetta
mini meat empanadas
mini meatballs or one meatball sitting on a sauce
mini quiches
mini egg rolls
won ton "chips" with sauce/dip

Is there a checkoff list so that 20 parents don't bring hummus?
