Where do you buy large quantities of meat for jambalaya?

I've gotten pretty good at making a 10-gallon pot of jambalaya (according to some of the feedback I've gotten - I hope they aren't just being nice :) And at that size, the meat isn't too expensive. But last week I was asked to cook for 300 people. I pulled it off relatively cheap (right at $400) because LeBlanc's had a huge sale on Boston Butt and Manda sausage. But, to get it all that cheap, we had to chop it all ourselves. That's a lotta work, and I don't mind doing that for a fund raiser or charity group (to minimize their expenses), but sometimes I'd rather pay someone else to do the chopping.
So - where's a good place to buy 50 or 60 pounds of meat and sausage, chopped and sliced, at a reasonable price? (I checked with Manda - they won't sell to me - they directed me to Choctaw Provisions). I have not called around and asked anyone for prices - just thought I'd check here and see what y'all recommend.

Ouch. But, yeah. Sort of. I've never paid anyone to chop it for me, but my wife is getting on my case about spending too much time prepping for these things. And it's hard to find help to do it all. (I did con a couple of guys into helping me last weekend, mostly by not telling them the details of what they were in for.)

Lamendola's in Gonzales. D&J's grocery in Gonzales. Kim LeBlanc's meat shop behind Triple S in St.Amant. They all make cut up kits but it won't ever be as cheap as cutting it yourself. It simply costs money to pay folks to do that for you.

Probably out of your way but Bohnings, in Ponchatoula, will cut up whatever meats you need for any size jambalaya. They just need a couple days advance notice.

I cut my fair share of jambalaya fixin's back in the day at Lamendola's. I would never buy meat from there or give Blair a dime.

Buy temple meat. Last month I bought it at around $1.69/lb I believe. It's already much smaller portions. Some keep them whole, but I still break mine down in to smaller portions.

Buy a 30lb case of temple meat, it comes in bite-sized chunks already...I believe Leblancs will slice the sausage if you ask

Commercial Type Fry Cutter to cut onions. Me and a buddy can peel and chop 25 lbs of onions in about 20 minutes, that would help speed up the chopping process.
You can also call Sysco, they may offer Street sales in your area. If not get a tax ID and buy from them.

I do have a fry cutter for the onions - cut up onions (at the so-called farm stand markets) are way too expensive. Which leads to another question - how do you clean the thing? I have to take it all the way apart, and even take the blades out to get it clean. (And I'm also looking for good, simple plans to build a stand for it - but maybe that's another topic for another thread - probably already discussed at length somewhere else on this board.)

Did you offer them beer? I've chopped up mountains of meat with a smile on my face, because there was beer.

I use Don's Specialty Meats in Scott to get my cut up marinated pork. I just cut the sausage myself.

Just takes a little practice, sharp knives and cutting up butts will be no big deal. I'm making sausage for the weekend and have 20 Boston butts to cut tomorrow. I'll crank up the swamp pop and have that done in about 4 hours or so. Used to take me all day a few years ago, now it's no biggie. And it's had to beat the price when they go on sale for .99/lb.
