Cookware Change - Jambalaya

I have been cooking jambalaya in a 7 qt cast iron for probably 10 years now. I've got it pretty dialed in. I recently bought a 5 gallon set up from Kajun Kooker and plan to cook for 35-40 people in two weeks.
Question is...how much of a learning curve is it to go from home size jambalaya to party size? Am I safe to use the same techniques? Any tips from you pros is much appreciated.

There isn't a large change, but be aware that it might be a little harder to control the temperature of the pot depending on your burner. So you might burn the bottom, be sure to roll the jambalaya and not scrape the bottom when it's time.

IMO its easier to cook a 5 gallon pot than 7 quarts.
Cut back on you water to rice ratio just a slight bit for the larger pot. Also maybe let it sit a few minutes longer after turning the rice.

I swear by the Jambalaya Calculator.
Have different sized pots at house, lake, friend's ranch, etc. It NEVER disappoints (and is cool as shite).
Wish we knew who created it.

Should be the same technique. My advice is to give it a practice run before you cook at a party so you're not going in it blind.

Seriously, I am not really a fan of jambalaya. I just wanted a fun little project creating the app and it delivered. I will get around to it one day. I have had a couple of friends make it and enjoyed it.

What did you pay for your setup? What all did you get?

I think I'll do a smaller practice batch tomorrow night.
