So I see the Instant Pot is back down to $85 on Amazon

Should I just give in and buy? If it makes legit red beans or beef stew in 1 hour its worth it.

Get it!! I use mine ALL the time. While you are at it buy the America's Test Kitchen Pressure Cooker cookbook. It is really amazing.

Put a beef roast in for 70 minutes and it was as if it had been in a crock pot all day. The taters & carrots only needed about 30 minutes.

Electronic pressure cooker, basically, but it can operate in many other modes besides "pressure cooker". It'll do "reduced pressure cooker", "slow cooker", "rice steamer", etc.

Does the browning/sauteeing option work well? Do you do that in the insert on the stove or with the insert in the pot?

The browning works very well using the insert in the pot. I love that feature!

Mine is 6 quart. I sort of wish I'd bought the 8 quart. I made some chicken stock on Saturday and it was a smaller batch than usual because of the size of the pot.

Just got one, too. Best pot roast ever. Stewed a great whole turkey breast. Can use it to brown before cooking, also works as a traditional slow cooker.

I keep hearing about these and may be interested at that price range.
The have different sizes. I'm usually cooking for 2 but like to make plenty for leftovers. May need to step up to the 6 quart for $118.68.
