1-We're Italians, we start getting food out at noon and finish around 9 PM....Tomorrow night.
2-This year there will be 23 of us,usually it's 30-35
3-Turkey, Pork shoulder, Smoked duck and sausage gumbo, gnocchi are the headliners.

1) my side: lunch at my parents' house. Wife's side: supper at our house

3) south Louisiana, river parishes for lunch, on the bayou for supper

I had exactly the same thoughts as you, but they come out pretty good. Cleaning the "fryer" is kind of a PITA, but still not as bad as the oil.

Lunch in Mandeville (20-25 people), then afternoon in Metairie (10-15 people). I hate driving on a full stomach

Last year we did one oil-less fried and one regular fried. The oil-less took a lot longer to cook, and iirc I didn't like the oil-less as much. The texture was a little mushier, not as crisp. This is just one person's experience though.
