Rattlesnake Rabbit Jalapeño from New Bohemia in Minneapolis. Really good too.

red bean and rice sausage or roast beef poboy sausage from two guys sausage.

Pete Vazquez of the appetite repair shop makes some pretty funky sausage. I've had a gimmicky macaroni and cheese sausage, and an amazing Vindaloo sausage.
