So I went with a pan seared cobia topped with rice flour fried SS crab, pickeld onions and lime buerre blanc. Sorry for crappy pics but I was in a hurry.
soaked crabs in egg wash
Fried in the ole Gran pappy in some seasoned rice flour and La brand shrimp fry mixture:
Inside, I picled some onions in some pickling vinegar. I should have added sugar but I was working too fast.
Seared up the cobia using salt and pepper in some pecan oil
In another pan, I whisked butter into the juice of a lime to create a creamy sauce. It broke, but did you know if you add a few drops of water it can restore itself? Didn't get pics of the restored sauce on the other plate.
Final product served with some sugar snap peas:

Your plating leaves a little to be desired but it looks good

That's to ta-ta for me...... Most family get together I go to we eating off of paper plates. At my house is the only exception, we use regular plates. Selve service to, I'll cook but I'll be damned if I'm fixing anyone a plate other than my kids or another child.
