Things that I learned at a crawfish boil today.....

Went to a boil today, was asked to help the cook out and he dropped some knowledge on me....
1. Boil the crawfish for at least 15 minutes, it makes them easier to peel.
2. Don't use ice to speed up the soaking process, it don't work.
3. The faster the water is boiling, the hotter it is.
The crawfish were, of course, way overcooked and didn't peel worth a shite. I had a friend divert him somewhere else on the last batch and I shut it off as soon as he was out of earshot(about 5 min), also threw in some ice. He was mighty proud after the complements on the last batch

Only way to improve is boil in plain water then sprinkle with seasoning after.

I bring the water to a boil and drop the crawfish and literally turn the burner off as soon as they hit the water and they soak for 45-60min. I know ice speeds it up, but I never use it. I just drink beer and listen to music as I wait.

It's to the point now that I almost dread boiling for friends. I don't particularly enjoy having 15 guys around the pot telling me how they boil crawfish. Asking me why I use so much salt. Why don't I use Proboil. You should just use bottled lemon juice as I'm squeezing fresh lemons into the pot. Best part is I'm always the one they fricking ask to boil for them when they're having parties. I guess they don't like to show their skills to the rest of the world.

Boil them that long and you probably can't peel them. They'll have the consistency of potatoes that were boiled for about 2 hours.
