Mardi Gras, Thanksgiving, and Christmas were crazy crowded, but my wife's favorite time is around the holidays, so we make do for her.

I was thinking October or February, but October may be tough because I usually stay busy during football season.

We've gone in January numerous times...outside of marathon weekend, it's pretty dead crowd-wise. Also, you can find like a week in between Thanksgiving and Christmas that is pretty calm where you can enjoy all of the Christmas offerings. Sept and Oct are usually great too. Crowds stay pretty low since school has only recently started, and you get the Halloween festivities plus Food & Wine Festival in EPCOT.

McDonald's quality) to the castle, the Canadian steakhouse at Epcot which sucked, the mexican place, the nice one at the grand Floridian I could go on and on. Only one that was good quality (excellent actually) was the California whatever on top of the contemporary.

I have taken my family several times and the best way to enjoy Disney is to book a Vacation House in Orlando area near the resort for about the same cost of a hotel. You can rent a 4 BR/3B home with screened in pool that is fully furnished with dishes and towels for roughly 125 a night. No hassling with guests, swim when you want, meals can be prepared. Another thought about Disney, take the kids to Breakfast at the Magic Kingdom Castle (must be reserved), lots of characters that come to your table and food is pretty good.

Then your taste buds must be food snobs. I'm not a defender of Disney, but several of their restaurants are consistently ranked 4 and 5 stars. You don't get that by being overrated or serving dog food.

We bought resale at Saratoga Springs. $57/point. 150 points. Cheap resort points wise. Cheap resort in terms of dues since it's the largest. Contract lasts to 2054 which is longer than most of the older resorts.
We basically paid $9k + $700/year for vacations the next 40 years. Staying at delux resorts, we break even in 8 years... 10 if you throw in ROR had we invested instead.
Throw in that we can rent out the points for $10/point at any time, and I feel pretty good about how we came out.
Also, I bought in at the low end of the market. Saratoga points are selling at $75-$80/point right now. If I needed to get out, I would make a 33% profit.

I've been thinking about the DVC for when the wife and I have kids. We have a regular trip elsewhere to see her family so it'd be nice to have something close by just to change things up.. and to go to with my side of the family. May even try to split it with my family, but probably not.
Anyone want to explain more about how it works? I did the pitch 8 years ago or so before everyone had fastpass with the wristband, and that was our prize for hearing the pitch, a card with fastpass. But I remember nothing but skipping the Rock'n'rollar coaster line 3 or so times

Quick Version:
DVC properties work on a point system. A certain amount of points is required based on the resort and room selection. When you buy, you select your home resort and the number of points required. You can make reservation at your home resort 11 months out, if you choose to use your points at another resort than your booking window is 7 months out.
Points can be banked (rolled over) into the next year so someone who does not go every year can buy fewer points and go every other year, etc.

To put it simply, you're wrong about most of the Disney sit down dining options. Some of the restaurants knock it out of the park. You sound like a Disney hater or just an internet troll.
