Only one overseas trip... where would you go?

If you had only one chance for a ~2 week overseas vacation before you started having kids, where would you go? We're big into wine, hiking, outdoor scenery, and history, but most importantly want the experience of immersing ourselves in a different culture.

I've never been overseas, but the first place I'd want to check out would be the Mediterranean Area (Spain/Greece/Italy)

I would have to do France. Lots of WWII history and wine, plus the Alps to hike.

SE Asia..Thailand. Excpet for the wine thing, that'd hit all your criteria. I've heard nothing but awesome things about going over there.

I would love to do a week in Ibiza and then a week in Mykonos in August. Z-packs afterwards

We're thinking that Italy is probably our best place to go visit, but are unable to visit during the "shoulder season" and would have to go in the summer (probably June) instead. Is the heat in June in Italy unbearable or is it not too bad?

I've already lived in Panama, Germany and Thailand. After all that, my only travel goal left in life is to drink a beer at the Guinness Brewery in Dublin, Ireland. I figure the trip to get there and back would be pretty fun.
