Food trip to Asia. Where ya goin'?

So, you want to go to Asia to eat, but where do you go? If you've never been, where do you want to go? If you're heading back, what was so good that you're missing out on trying new places?
I love almost all Asian cooking, but damn it's a long flight and jet lag is a SOB, but that's not enough to keep me from going. Sichuan is one of the few places I have no desire to go back to for their namesake cuisine. Being a proud south Louisianian I thought I could handle the peppers. shite no. I don't know how they do it.
Thailand: Bangkok/Chaing Mai/Phuket. The food can vary greatly depending on region, but they love their street food.
Vietnam: Ho chi Minh/Hanoi for some Pho or Banh Mi?
Hong Kong for some dim sum or pork buns?
China: Bejing/Szechuan/Chengdu for Peking Duck, Pepper filled Sichuan chicken or beef, Chengdu hot pots?
Japan: Tokyo or Osaka for sushi and yakitori
Korea: Seoul for Kimchi, Bibimbap or BBQ?

Yes please. to all of that. I'll never go to Asia. My wife is intimidated by how smart they are.

Thailand no doubt. I don't know why you couldn't do Thailand and Vietnam on the same trip, though.

I went to southeast asia last summer..cambodia/vietnam/laos..In vietnam I visited hanoi/saigon. The food was good but I think your other optons would be better. The banh mi weren't flowing like honey, the fried food ("nem") was really heavy, and the pho wasn't anything particularly special. Maybe I wasn't doing it right, I dunno. I did eat some really good street food, like steamed pork buns, dumplings, roasted birds and the like. Also got the Big D something fierce over there. It's almost unavoidable, it's an entirely different floral and fauna and I think more foreigners get sick than don't.
Haven't been to tokyo but that's gotta be on the food trip. Actually all those pics you show look awesome. The big cities are probably where you'll eat the best food.

Man....I tried and tried and it was just miserable hot . After finishing a couple dishes it felt like somebody stuck a lighter on my tongue. I realllly don't know how they do it.

Just did a Tokyo trip and it was pretty incredible. Good time to go as well. The USD is very strong to the JPY. I'll probably stop on my next one as well to do another sushi blowout for a night.

The best I've had was in Atlanta (Sandy Springs to be exact) at Peter Chang's Tasty China II. The "shan city chicken" was unbelievably hot. It was loaded with peppers and sichuan peppercorns. I've never had a sichuan dish bring that much pain, but it was so damn good. The same with the dan dan noodles. I've had really good stuff in Houston and Dallas, but this was by far the best and hotest. Unfortunately that location closed, but I think there is one in Marietta that the same chef started. I plan on heading back that way in a few months and I'm excited about it.

My goodness that all looks incredible. If/when I do that I'm just going to watch all the Bourdain shows on Asia and go where he goes.

In hiroshima I tried the Okonomiyaki, which is incredible, as well. I also loved Yakiniku (grilling on your table). I miss Japan

Agreed. Korean food has never wowed me. My dad went on business to Korea a lot so he'd take me to Korean restaurants around here a lot. I think he felt hurt that I wasn't blown away by it.
All the others, though...game on, baby.
