What to do with geese breast? How to cook?

Killed a few this morning. Have the breast in the fridge. A friend likes jerkey, but is there any way to cook it that any of you have done and its good? TIA

Use my duck recipe.
1. Marinate in garbage can
2. Defrost deer meat
3. Enjoy

lol i dont like wasting meat and throwing away.
and naw no golf club, benelli... these things have been flying in pretty regular at the little pond i duck hunt at on the farm all year.

Geese are better eating than ducks. I still enjoy ducks with that said.

do you cut them in strips and put on grill? Or are u putting the whole breast on grill. just salt and pepper? Marinate? How long? i know lots of questions.
Any good in crock pot cooked down? or no?

On pit cook whole medium rare. Cut in strips like backstrap. Or fry them cut into 1 inch thick strips marinate batter and fry ( I love them this way ). Or a gumbo can't frick em up this way

in great white north the only geese I get are canadas. So what do I do w/ them:
1) gumbo - smoked sausage and goose gumbo
2) put breast on the smoker - they are tasty but you need to inject some olive oil (or similar) to keep the breast moist. takes 4-6 hrs in my little joe. I also glaze outside w a marinade that includes brown sugar
3) can make stroganoff w/ the meat substitute goose for beef but best to use a slow cooker
4) if the goose is a juvenile you can cook breast on a pit w/ marinade of your choice. If its an adult see 1 or 2.

Goose sausage or pepperettes would be good - I just don't have a good sausage maker nearby. Some guys make jerky w/ it but it is gamey and meh. Venison jerky is much better.
