Had some food in New Mexico

Wish I had pics . Stuff would kill in la. Had burgers with green chile sauce, great tacos with tomatillo and red verde .

Supposedly Alyssas in Denham Springs is New Mexico red and green chili sauces on tacos etc.
I don't really know this type of cooking but it seems to match what you are saying.

Here is my New Mexico red sauce recipe thread. I make my pepper mix by grinding New Mexico red peppers in a coffee grinder. But I have seen the mix showing up at whole foods in pre ground packages.

Here is my green sauce recipe
New Mexico Green Sauce
1 tablespoon shortening or oil
1 cup chicken broth or veggie broth
1/2 cup chopped onion
1 teaspoon garlic powder
2 tablespoons flour
3/4 teaspoon salt to taste
1/4 to 1 cup chopped green chile (preferably roasted Hatch. Roasted Anaheims will work but you may want to add a jalapeno or 2 for the heat as anaheims are what I would call mild in heat).
1. Heat shortening in a medium-sized skillet on medium heat.
2. Sauté the chopped onion in shortening. Add flour and cook for 1 minute.
3.Add all remaining ingredients and simmer for 20 minutes.
If the sauce is too spicy you can add a teaspoon of canned tomato sauce and re taste. Keep adding tomato sauce in small increments until you get the heat down to where you like. I add about 2 tsp of tomato sauce always as I like the added acid hit.
Then you can follow my New Mexico Red Sauce recipe for making the stacked enchiladas. See link above.

Last time in Santa Fe we had a green chile and hamburger pizza. It was incredible and would go over very well in TX.. not sure why it's not offered (anywhere I know of).

My favorite burger in New Mexico was the green chile cheese burger at Los Ojos Saloon in Jemez Springs.

Green chile cheese burger is a must have in New Mexico. Getting a combo plate (taco, enchilada, chile relleno or tamale), is always a great choice, ask for it "christmas" (with red and green chile). More must haves: Breakfast burrito (I always order a bacon, green), green chicken enchilada, and burritos (various fillings) and sopapillas. If you're unsure if you can handle the hot, order chile on the side and adjust the spice. Hope that helps.

In Taos, Eskes Brew Pub has a great burrito w/ green chile stew over the top of it. Get an 10,000 foot stout too. They have a Green Chile beer but I'm not a fan of spicy beers.

Huevos Rancheros or chicken fried steak and eggs at Perea's on Central (route 66) are pretty spot on too. Always take the waitress' advice and stay away from a particular color sauce if they say it is too hot that day. Otherwise, christmas all the way!
