Poach if you want a neutral chicken flavor, smoked of you want something with bite.

Roasted or poached. Smoked is good also Just not my preferred method

Put some chicken breasteses on a sheet pan, oil those breasteses up, add salt and pepper, and bake. Don't over cook it. Don't let those breasteses dry out. For the love of God, don't let those breasteses dry out.

I like to slow-cook it in a crockpot (like pulled pork) or just de-bone a rotisserie chicken and put that in there. I'm probably doing that tonight as I use most of the chicken for a spaghetti.
