Benton's Smokey Mountain Bacon and Ham

David Chang swears by this company's bacon, so I ordered some, along with some ham. Anyone ever have any experience with this company's product? Mine is arriving today, just in time for the hunting season.

I've cooked their hams before and I keep the bacon on hand always. They really live by the whole "country ham, cured in salt" idea so their products are saltier than what you may be used to. I think its the best though.

Bacon is awesome! Ham is a little too salty for me, though.

Benton's is simply the best. I am currently in the process of learning everything I can about curing and smoking meats. I have a want to make some damn fine bacon.

I bought about $80 worth when in Tennessee. I found it to be very smoky in flavor and just OK bacon. It tastes like it has a pound of salt on each slice. I prefer Wright's bacon to Bentons. I still have a pack of Benton's in the freezer. It was not bad, it was actually good bacon, just I guess I had hyped it so much in my head and it didn't deliver.

Interesting. I actually read an article where a chef asked Allan Benton to make a less smoky version because he didn't like all of the smoky flavor. Benton was going to do it then declined. Wright's is good...just wish it had more smoke. This might be why I love talking about food.

It's amazing. I need to order some soon.
A friend of mine is a chef. He got married a couple of weeks ago. For the outdoor reception, one of the finger food that he put out on the table for before dinner was vases full of bacon standing up.
He took some Benton's bacon and marinated it in Vermont maple syrup, brown sugar and cayenne pepper and then baked it on racks.
It was so damn good.
