My go to is always asparagus and sweet potato, however the other night we had some red potatoes laying around so I cut them up, put them in a bowl, dumped some fresh garlic, dill, sea salt and fresh cracked pepper on it and baked for 30-40 minutes
Took them out, put back in the bowl, put in a couple of tablespoons of sour cream and a dab of butter and they were amazing
Wife was hooked. Tasted like a creamy hot potato salad with tons of flavor

Check out the Momofuko Asian brussel sprouts recipe. Something about adding fish sauce into the mix takes them to another level.

Delmonico Potatoes.
These Potatoes are the traditional side dish for the Delmonico Steak.
INGREDIENTS:
· 6 medium potatoes (about 2 cups when cooked and diced)
· 1 3/4 cups light cream
· 3/4 cup grated cheddar cheese
· 1/2 cup buttered bread crumbs
· 4 tablespoons butter
· 4 tablespoons flour
· salt and pepper to taste
PREPARATION:
Boil potatoes in lightly salted water until almost done. Drain, peel. and dice. Place in a buttered baking dish. Combine flour and butter in a saucepan over a low heat. Mix into a roux.
Slowly add cream, stirring constantly. Simmer until thickened. Season with salt and pepper. Pour over potatoes, toss to coat. Cover with cheddar cheese and sprinkle with bread crumbs. Bake at 400 degrees F. (205 degrees C.) until cheese is golden brown.
