Because I don't remember them or I would have happily given them to you. It was a while back. I was in the middle of something at work or I would have googled for you and tried to find the article. I think it may have been on Food52. You're a bit cranky today, so I'll bow out.

Absolutely perfect!


To the OP, save the guac in a deeper storage container (think mason jar size) instead of a wide one, then squeeze/brush lime juice on the top. Even if the top part browns in 48-72 hours (depending on how much lime), the bottomw will still taste fine.

I use lemon instead of lime, omit the cumin and add a lil bit of helmans along with the other stuff.

Keep one or two of the seeds in with your guac when you store it.

There's a Latino grocery store by my place that does this, and they explained that it adds a few more days to the shelf life.

They could just be scamming everyone so they can add the seeds to the container, but I've noticed a definite difference.

Nope, keeping the seed is true.

Adding lime, lemon, or orange juice(if its the only citrus I have helps). If you only use one half of avocado, keep the seed in the other half and put clear wrap over it.

Air is the biggest factor- anything to keep exposure to air at a minimum (sealing plastic wrap against the surface is one option), but the acidity of lemon/lime also seems to have a preservative effect. Combine the two- brush the top with a little lime juice and seal plastic wrap against the top.

That said, there's still air trapped within the guac, so it's still going to turn brown to some degree.

Cover it with water and then dump the water off when you need it. It'll keep 4+ days this way no problem.

Smooth out the top with the backside of a spoon, sprinkle with lime juice , press saran wrap directlynon top of it. It will stay green for 4-5 days.

The seed thing is bogus.

Harold McGee in his book The Curious Cook left two bowls of mashed avocado side-by-side, one with the seed placed in it, the other with a seed-sized light bulb stuck into it. Both browned at exactly the same rate.

The seed is no more effective than anything else that keeps air from hitting the guac.
