Had to go get some breakfast sausage after reading this thread. About to start my gravy. Bought weight brand sausage. The jimmy dean was $6.19 a roll.

My buddy from EP would brown and then melt onions into his braising liquid to make his "grease gravy". Hate the term...loved the finished product. Best when a good smoked sausage and cat squirrels are used.

Nope. I don't know what style he wanted, but I was with you...thought he was looking for a Southern style thickened gravy with sausage drippings and sausage.

Well reading down his posts that's what I thought. Hell I make a dozen different gravies in an assortment of colors as well. Some with flour, some with tomato paste, some without flour, some with chicken, beef, pork, lamb, I even made a chocolate mole not long ago. That was a project and a work in progress.

Well moist of those joints don't even cook the flour and they all taste too floury. Not sure if that's a word but I'm sure you of all people will get it. Mike wouldn't but he wouldn't stay in a Hampton Inn either.

I think most "establishments" get their sausage gravy out of a plastic sack out of a cardboard box with sysco stamped on it. or, they/Hampton may scoop all the unused or only slightly chewed on patties and crumble em up in the pre-mixed gravy bowl? however, it's consistent, I can always bank on getting a volley of rumblin' belly roars about 8:45.
