I will never be a vegetarian or vegan by label. I have no opposition to eating meat.
But I have found that if you go for a period of time trying to stick to veggies or small amounts of white meats, I feel a lot more energetic and better in general. Happened upon this just experimenting with cooking.
So I don't view the concept as harshly as I used to.

Seriously I just take everything in moderation. I tried to go vegetarian for a diet but felt worse than I ever have in my life. Zero energy and weak all day. I eat red meat some meals, white meat other meals, seafood, and vegetable and fruits. Sometimes I eat them all on the same plate. I move around to offset the all on the same plate meal. I also move around on a regular basis. If others want to eat salad every day that is their own buisness. But not tofu. Anyone who eats tofu should be made fun of and made an outcast.

I think most of the links between eating meat and heart disease are processed red meat. That said I think we would all be a little healthier if we at a little less meat and way more fruits and vegetables.

I can agree with eating more fruits and vegetables as I need to do so myself, but there is no evidence (unbiased anyway) that proves that eating red meat is bad for you. Almost all of the links made are based off of the lipid hypothesis which is still a hypothesis and has never been proven. On the contrary it has been disproven over and over again.

What were you eating? I honestly have had the opposite experience but I make sure I get plenty of protein.

Yes. I used to hunt and kill my own protien when I was younger, and the smell of fat grosses me out. I also cut into the stomach's a few times. And with chicken, I would catch my great grand mothers chickens, and she taught me how to pluck the feathers and cook those. I will sometimes smell, or see a dead chicken and it puts me in a veggie mood for months. I do eat protien btw, but would rather it be sea food or fresh water fish.

I was a vegetarian for about 9 months in college. I worked at P.F. Chang's at the time, so I mostly ate the veggie options from there, which made life easy. And, the cooks didn't have a problem coming up with weird veggie dishes for me to try, so that helped as well.
As soon as I quit there and realized I couldn't have Szcheuan Asparagus for free anymore, I went back to meat.

Vegetarian and Vegan are really the only 2 dietary styles that I have not tried in the last few years. I've been considering giving each of them a fair try just because I haven't yet, but I've tried just about everything else. However, I have a really tough time thinking about not eating meat. I'm very anti-soy as well so I wouldn't be eating tofu.
My sister has been a vegetarian her whole life. Thankfully, she's not preachy and is very respectful about people eating whatever they want. When I visit her I usually get to try some vegetarian food. It's really not bad.

I eat some meat substitutes like seitan along with eggs, cheese, beans, protein shakes etc

Fruits and vegetables but did not supplement with protein.
