Anybody know what to do with a White eggplant?

Treat the same as the black ones? First year I've planted them and I've got about 6-7 that need picking....TIA

Ghost Eggplants are tasty. I think they have a slight bit more sweetness to them. I had small ones, diced them and pan sauteed them with some garlic and hers in olive oil

Ghost Eggplants
Is that what they're called? Anyone know if the light purple ones are the same?
I like both the white & light purple ones. I also think they taste a bit sweeter than regular dark purple ones, and maybe a bit less bitter?
Basically, I use them all in the same ways except that because of their smaller size, the small ones don't usually work well for stuffing.

The variety I planted is called Japanese white eggplant. I do remember seeing one called a Casper white eggplant..that's probably the one referred to as a ghost eggplant I would think. I also planted Black Beauties and Ichiban or some such kind. I'm about to have them coming out my ears...

Originally, all eggplants were small and white. That's why they have the name.
I have heard that the skin on small eggplants is a bit tougher than the big purple ones. Take that into account when you use them.
