Cheap Meal Thread

I wanted to see what others do to make good meals but cheap.
The Story:
Today I was with the lady friend and her two sisters (each with five kids) were at her house so I decided to cook lunch for everyone, We settled with Nachos.
The Products:
I went to the store and got two packs of ground meat, heavy whipping cream, two onions, a bell pepper, and a pack of shredded cheese, it all came out to $21.00. (I had butter and flour at the house already.)
The Process:
I made the cheese sauce by melting butter (about a stick) and adding flour, then after it was mixed I poured in the cream and stirred...added a little extra milk and the bag of cheese. After the meat was cooked and the veggies were sauteed I mixed it together and served. A total of 12 people ate their fill for only $1.75 per person.
What does the F/D board do for quick easy and relatively cheap meals?

Brown seasoned ground meat in a sauce pan. Remove meat and sauté trinity in same pan. Add some water or beef broth and corn. Cook till tender. Serve over medium grain rice. Some people add a table spoon of mustard to the meat for a different kick

Nachos are a great cheap meal.
My go to is pork chops from Sam Club with asparagus. Both sautéed with balsamic vinegar. My crowds are typically older though so it's $20 for about 12 good sized chops and $8 for asparagus. Serves 12 for <$3.00/person even when you factor in seasoning and the balsamic vinegar.

spinach & kale salad w/ baked chicken is my go-to cheap, easy meal. throw in some grape tomatoes, carrots, red onion and toss w/ evoo + balsamic then shred some chicken. I can make that for about $45 bucks last 3 days of lunch + dinner.

Sour Cream
small shell pasta
Brown jimmy dean sausage with bell pepper. Boil noodles.
Mix sausage, cooked noodles, and sour cream together. Not bad and very inexpensive.
