I asked in another thread.... can you smoke anything worth a shite today? planning on putting a pork loin and some chicken thighs...

I was wondering the same. There's a smoking meat forum I read and it seems like the consensus is cold doesn't change anything. Which seems odd.

Had guys smoking in snow.

You can do it, but you will have to endure the weather while trying to keep the temp under control.

Been wanting to smoke some bacon and Andouille but we've had a month of "spare the air day(s)" so I couldn't. Today is OK but it's starting to rain (just a bit) which is OK by me since we're in the worst drought in the last 100 year.

Which brings me to a question. I had to freeze the sausage (made it 3 weeks ago), does anyone think it will be OK to thaw it then smoke it or did I screw the pooch?

I don't see any problem thawing and smoking. I also don't know why anyone would think its a problem smoking anything in cold weather.

I also don't know what the hell a "spare the air" day is. I mean I think I've got a good idea but by god smoking some sausage is bad for the environment?

I don't know what my neighbor is cooking but I'm about to dig under the fence and steal it. Worth standing outside just to smell it.

What does the external tempreature have to do with what you will smoke? The only thing that matters is the temp inside of your smoker. Maintain that like you would have to any other day and you'll be fine.

I've found it harder to manage a smoking session on days that are really windy moreso than cold. If you have a good smoker it should be well insulated.
