Don't wreck those Camellia red beans with a crappy sausage!

The Richard's and Savoie's Boxes of Smoked Sausage have Beef Hearts and MSG, and other Fillers.

I've done this a number of times when I haven't picked up sausage or andouille elsewhere. Works well as a substitute.

Have you tried Bergeron's smoked sausage or is Maxwell's just better overall?
No. I've never heard of Bergeron's. Where is it?

Hickory smoked sausage made at Fernwood Grocery in Fernwood Miss.. They have been making this sausage for well over 50 years. I would not cook any kind of beans without it. It's that good.

In Lobdell.
Savoie's has better flavor that that awful Monjuni's sauce you use all the time.

Bergeron's. Where is it?
On Benton Road (Hwy 3) in Bossier just north of the Greenacres Blvd. traffic light. It is a satellite of the Bergeron's in Port Allen.

Jacob's andouille is the correct answer. Last year I was tasked to make a pot of RB for a Mardi Gras breakfast in NO. I think I used about 5 or 6 ingredients, RB, onions, andouille, S/P, parsley. The pot was cleaned out.

Wow, that brings back a memory. Where is Lobdell? My dad used to get phone calls from Texaco telling him to report to Lobdell to get some broken drilling bits out of the hole. I've never been to Lobdell. Gonna guess it's near West Cote Blanche, Marsh Island, Henderson or Morgan City. He always had to do fishing for drilling bits on those sites back in the 50s.

Fontenot's out of Ville Platte is very good. Was a very very good sausage for seafood gumbo and then made red beans both were some of the beat I have ever made.....Even these redneck Gator fans I'm surrounded by loved it.

Lobdell/Port Allen outside of BR. I didn't know there was a satellite store in Bossier. I'd drive there for goods if I lived in Shreveport.

Not a single vote for Comeaux's? Since I am in dallas, I have to work hard to find good andouille around here. The best I can buy in a normal store is Comeaux's andoille. I also order from cajun grocer.
I am not a big fan of savoie's stuff. I like their green onion sausage though.
I get double D from my local cajun market, and it is not bad.
I am also partial to coarse ground texas hill country sausages. It is hard to find up in dallas though. You get all the czech and german influence so it is generally very flavorful.

Tramonte's or Chris' speciality meats are very good! They run about $5 per pound and are much better than anything you can buy in the supermarket.

Bourgeois Meat Market in Schriever is worth the drive.
