what is the best these days.
looking for something hassle free that will look good for years.
i've never replaced my counters before so not sure what's the best material these days.
is it still granite or bust?

I prefer granite, but I'm sure I'm behind the times.

Engineered quartz will give you the look of granite, and doesn't need to be sealed.

Quartz is very durable and requires minimal maintenance. It is more expensive than granite

SOAPSTONE
ZERO maintenance EVER
(unless you just feel like mineral oiling it once in a while)
100% impervious to all acids/bases or any other chemical, and all temperatures (no sealant or other treatments ever needed)
can not be stained with anything
down side: will show scratches, but most people actually like this softer less formal look - and scratches are easily repaired if you're into that
seriously It is so gorgeous and user friendly - best decision we made in my new house

Does soapstone come in colors other than gray?

Wood. Like an OG.
OK someone mentioned slate. I think that's a good option. It wasn't available for our house so we chose granite which I like also.

Yeah, Soapstone & Silestone (pressed quartz) seem to be all the rage

as far as what is trending granite is going out of style. Quartz is big right now, ton of color/style choices.
Also, white appliances are now coming back into style as well

I enjoy the combo of Soapstone or concrete and copper
Copper for accents like bar top and sink
soapstone for the large counterspaces
