What's your best Louisiana Chili recipe?

we're having a chili cook off at work friday. the prize isn't much, but i don't like to lose. what's a good chili i can make?

This is the epic thread, but there have been about 3 or so threads very recently on chili. You should be able to find them pretty easily on this board.

The past two weekends I have been in two chili cookoffs where I thought we made excellent chili. Both times we were the only ones to make authentic Texas, no bean chili, with mostly cubed meat (ground meat thrown in for a little texture) and made with reconstituted dried chili's not chili powder. We thought it was fantastic, got lots of compliments from the crowd but both times judges didn't put us in the top 2. I bring this up because I think people in South LA like chili with beans, ground meat, and slightly soupy. So if you want to win you may want to go that route even though I think that is not authentic chili.

I may get chastised for this, but I use the 2 alarm chili kit from Albertsons and it always comes out great. I use rotel instead of tomatoes and and add dark kidney beans.

I've cooked it at work a few times and didn't tell anyone it was a mix, and had several people tell me I should enter a chili cookoff.

I'm 5th generation Texan on my Dad's side and put both in my chili....rice too.....so.....

There ya go

Made it the other night, added some blue runner red beans to it and it thickened up nicely. Very quick meal that turned out rather well.
