Do I need to change voltage or anything? I put the Ratio at 20.5 for 4.1GHz. Leave the rest alone, they're auto?

After 20 minutes of Prime95 Blend Test:
Socket temp: 55°C
Chip temp: 36°C
at 4.3GHz after 20 minutes:
Socket temp: 59°C
Chip temp: 41°C
Socket temp: 55°C

As blue said, auto voltage usually does suck, but at 4.0/4.1, leaving it at default is fine. Once you start going beyond that, you're going to need to fine tune as much as you can to avoid overheating or degradation. I haven't done advanced OCing on an AMD board in quite some time, so a more up-to-date guide elsewhere would be more informative than I can be.
With where you're at on socket temps (59C), I would start manually tuning the voltage if you want to go any higher.

I'm running it at 4.3. Stable and temps were still plenty cool with the chip hitting 41°C after 20 minutes of Prime95 Blend Test.

Yeah the AMD site says max socket temp is 70, it never hit 60 although 59 is close.

A comfortable 4.3 is pretty good, though. I'll bet the binning process for 8350 and 8320 these days is simply the act of labeling it one or the other depending on market demand.

Yeah I'm happy with it, I went ahead and put it at 4.2GHz and after 15 minutes of Prime socket is at 53°C and chip 34°C.
Going to leave it there and call it good.

Those FX chips actually stay pretty cool until around 1.6V when you're trying to hot hit 5Ghz. I would personally OC 8350s to 4.5 and OC the NB while keeping within the original factory ratio between them. Also depending on your RAM clocks, the NB may need to break that ratio.

I'm running at 1866MHz RAM, 9-10-9-28 timing per G Skill specs.

I've been doing a little research and the $700 build you linked seems excellent for what I'm looking to spend
What OS would you recommend? I know I can run Linux for free, but I'm not sure how I'd feel about that.
and any recommendations on good keyboards, mouse, headphones?
I will prob go with a dual monitor set up and I'm debating having them wall mounted.
