One thing I started doing recently that I enjoy is cutting the filets lengwise into long slender strips. The pieces then curl when cooking. I just love that.


You cornmeal people are crazy. I use the lightest/finest fish fry I can find.

Corn flour which is the main ingredient in most fish fry batter mixes makes for delicious and crisp fried fish. The trick is using ice cold fish.
I like a combination of corn meal and corn flour seasoned.

Don't overcrowd the fryer. It will lower the oil temp too much. Won't be as crispy.
