I figured it has something to do with leveling up.

Right now, I just look for someone that appears to have weaker defenses (lower level walls, only a few cannons, archers & mortar). I think that part of my problem is that I can only have 70 troops total (less if I use giants). I've leveled up warriors and goblins so far to level 2. I also have one barracks at level 5 so I can create wall breakers.
Maximum, I can store 51,000 elixir currently. I do have one of my elixir storage being upgraded to level 6 right now which will get my to 76,000. So, the only troop unit I can upgrade right now are archers. Is it worth it? Or should I work to improve my elixir storage and production?
