Quinoalaya: with pic

Have a guest who's a vegetarian over for dinner so I decided to stop pointing/laughing and cook something she'd eat.
1 large carton whole mushrooms
1 large onion
1 bunch celery
4 cloves garlic, minced
2 tbsp soy sauce
1/2 tsp red pepper flakes
1 bunch parsley
2-1/2 cups quinoa
pinch dried thyme & basil
salt/pepper to taste
Saute' the onion and celery til almost clear and drop in the mushrooms(washed and quartered). Add soy sauce, dried seasoning, and parsley. Continue to saute until the onions are clear. Add quinoa, garlic, and 5 cups water or veggie stock, bring to simmer and cover. Simmer til liquid is absorbed.
Not being a rabbit myself, I prefer to use meat, but this was actually tasty enough for me not to mind.

Should have stated beforehand that I took that pic while it was still simmering/still had some liquid. I'll go take another and edit.

She's enjoying it as I type. I personally prefer it with chicken and sausage instead of the mushrooms but I can make a concession here and there.

It looks good to me. I made a very similar dish minus the soy. It was very good.

I would recommend starting with the mushrooms. Alton Brown used a technique that almost makes them taste like beef. Slice them flat rather than in chunks. Saute a few at a time until they turn golden brown and then do the next batch. You don't want to overcrowd because that leads to steaming instead of sauteing.
Then I would proceed with the rest of the recipe.

Looks delicious! I'm a sucker for mushrooms. As a fellow veg, I will be trying this. I will probably add more veggies, though.

I made it once before with grilled portobellos and grilled eggplant. That was much more satisfying to my carnivore sensibilities.
